Fredrik Berselius is the young chef-owner of Aska in Brooklyn, New York, and a truly exciting New Nordic chef. Aska has earned top reviews and has been named a top-ten restaurant in the US by Bon Appétit. Aska re-opened just a couple of months ago and is rewarded New York’s best new restaurant by the 2017 Michelin Guide – and with two stars!
For two years, Fredrik patiently waited to find the perfect location for his restaurant. Now Aska is housed in an 1860s warehouse at the edge of the Williamsburg Bridge, just like he wanted. His cuisine features an apparent simplicity and intense creativity, with seasonal, local ingredients in constant focus. Using the best hand-picked and local ingredients available, his food is visual and tactile. Apart from being a chef, Fredrik is passionate about foraging, which means he might start his work day in the forest picking weeds and all sorts of plants to be served in his restaurant later that night.
Fredrik was raised in Stockholm and is a James Beard award nominee.
